Chicken and Peppers Tacos with Guacamole – Serves 2
2 chicken breasts, sliced into 1 inch strips
1 green pepper, sliced
1 red pepper, sliced
1/2 yellow onion, sliced
3 tablespoons of fresh cilantro
1 lime, juiced
3 green onions, chopped
3 radishes, sliced
3 tablespoons of olive oil
1/2 teaspoon of chili powder, garlic powder, onion powder, salt, and pepper
1 teaspoon of cumin
1 small head of butter lettuce, chopped
Preheat your oven to 400 degrees.
Add the sliced chicken breasts to a non stick cookie sheet and coat with olive oil, salt and pepper. Cook for 20 minutes.
While the chicken is cooking make your guacamole. Slice the avocado and combine with the juice of 1 lime, cilantro, green onions, 1 tablespoon of olive oil, radishes, salt and pepper. Mix, cover and set in your refrigerator.
Chop your butter lettuce and set aside on a plate.
Next, make your taco seasoning by combining the cumin, chili powder, onion powder, garlic powder, salt and pepper in a small bowl.
Slice your red pepper, green pepper, onion and 2 tablespoons of olive oil then set in a large skillet.
When the chicken is done, remove from the oven and slice into 1 inch pieces.
Begin cooking your peppers and onions over medium high heat. After 5 minutes add your chicken and taco seasoning. Cook for another 5 minutes, making sure to stir so that the vegetables and chicken are coated with the taco seasoning.
Serve with heated corn tortillas, lettuce and your guacomole.
