Roasted Lamb Chops with Charred Asparagus and Yogurt Sauce

Roasted Lamb Chops with Charred Asparagus and Yogurt Sauce – Serves 2

Cooking Items

  • 4 bone-in lamb chops, about 1 inch thick
  • 1 tablespoon of your favorite steak seasoning (Penzey’s Chicago Steak Seasoning)
  • 2 tablespoons of olive oil
  • 1 bunch of asparagus
  • 6 – 8 green onions
  • Salt and pepper

Yogurt Sauce

  • 1/2 cup of greek yogurt
  • Juice of 1 lemon
  • 1 tablespoon of fresh dil or fresh mint, chopped
  • 2 garlic cloves, minced
  • Salt and pepper

Directions

  1. Preheat the oven for 400 degrees.
  2. Mix all of the ingredients for the yogurt sauce in small bowl and put in the refrigerator.
  3. Pat the pork chops dry with a paper towel then drizzle with some olive oil and add your steak seasoning.
  4. Heat up an oven safe skillet with some olive oil over medium high heat. Add your lamb chops and sear for 2-3 minutes. Turn the lamb chops over then place in the oven for 10-12 minutes. Cook to a medium rare temperature which is 145 degrees or medium temperature which is 160 degrees.
  5. While the lamb chops are in the oven, add your asparagus, green onions, a drizzle of olive oil, salt and pepper to non stick skillet and cook over medium high heat.
  6. Plate your lamb chops with the charred asparagus and green onions. Add several spoons of the yogurt sauce to plate and serve.
