Slice the green pepper and white onion and put in a large bowl.
Slice the skirt steak (1/4 inch slices) and add to the bowl.
Add the soy sauce, hoisin sauce, garlic and ginger to the bowl of beef and vegetables. Using a large spoon, mix together and let marinade for 15 minutes.
Use a small cooking sauce pan add 1/2 cup of rice and 3/4 cup of water, then bring to boil. Once it starts to boil, cover with a lid and turn the heat down to simmer. Cook for 15-20 minutes. Stir the rice every 5 minutes so it doesn’t stick to the pan.
Heat up a wok or large skillet with 2 Tablespoons of coconut oil over medium/high heat. When the wok is hot, add the beef and vegetables.
Cook for about 8-10 minutes, stirring the vegetables and beef about every minute to make sure all the beef cooks. Serve and Enjoy!
